I was looking into something like that, getting an older vfr800 and shedding a load of weight off it, turning it into a track weapon but not had the chance really yet.

First bike was a VFR 800. I loved it to bits and miss it.
I too have wondered about the 1200. I think the VFR is a bit like Marmite.......love it or hate it.
